INGREDIENTS:

Olive oil: 1 tbsp

Onions, sliced: 2

Ginger, grated: 1 tsp

Green chilli, chopped: 1

Lemon grass, bashed & : 1 stalk

Carrot, diced: 1

Beetroot, parboiled, peeled & diced: 1

Lime leaves, slivered: 2

White vinegar: 1 tsp

Veg stock: 500 ml

Salt to taste

Black pepper powder: 1/2 tsp

Coconut milk: 1/2 cup

Cream: 2 tbsp

 

METHOD

1) Heat a pot, add olive oil & onions.

2) Sauté till it turns pink, add ginger, green chilli & lemon grass.

3) Sweat a little & then add carrot.

4) Cook for 4 mins on high.

5) Add beetroot & lime leaves.

6) Add lime leaves & white vinegar.

7) Add veg stock & season with salt & black pepper powder.

8) When a boil comes, add coconut milk & simmer for 15 mins.

9) Remove, cool & blend to a puree, add cream & serve hot or cold.

NOTE: This is an ideal summer soup, specially for the ones suffering from anaemia. Option for white vinegar is rice vinegar or white wine. Enjoy!
