INGREDIENTS:

Chicken pieces: 8

Potatoes, boiled: 4

Lemon wedges to garnish: 2

FOR CHERMOULA MARINADE

Onion, chopped: 1

Garlic, chopped: 3

Cumin powder: 1 1/2 tsp

Red chili powder: 1/2 tsp

Paprika powder: 1/2 tsp

Turmeric powder: 1/4 tsp

Rind of a lemon

Juice of a lemon

Parsley, chopped: 3 tbsp

Coriander leaves, chopped: 3 tbsp

Salt to taste

Black pepper powder: 1/2 tsp

Olive oil: 3 tbsp

 

METHOD

1) Marinade chicken pieces in a blend of all the ingredients of the Chermoula ingredients overnight, if not then at least an hour.

2) Place marinated chicken on a roasting tin & roast in a preheated oven at 180 deg C for 40 mins.

3) Remove, surround with potato wedges & roast for another 20 mins.

4) Serve hot with lemon wedges & fresh parsley.

NOTE: This is a delicious marinade from the Moroccan region, full of fresh tangy flavors. Enjoy!
