INGREDIENTS:

Olive oil : 2 tbsp

Garlic chopped : 6

Mixed dry herbs : 2 tsp

Black peppercorns crushed : 1/2 tsp

Red chilli flakes : 1 1/2 tsp

Salt to taste

Cottage cheese cubes : 250 grams

Tomato wedges : 1

Orange juice : 45 ml

Parsley : 1 tbsp

METHOD

1) Take a bowl add 1 tbsp of olive oil, 4 flakes of garlic, 1 tsp of mixed dry herbs, 1/4 tsp of crushed black peppercorns, 1 tsp of red chilli flakes, salt & the cottage cheese cubes & marinate for 10-15 minutes.

2) Grill on a skillet till pale golden brown on slow flame, for about 5 minutes turning from all sides. Remove.

3) In the same marination add tomato roundels & saute’ for 2 minutes on high! Remove.

4) For the dressing, take a pan add 1 tbsp of olive oil, 2 flakes of garlic & saute’ for 30 seconds!

5) Add the orange juice & let come to a boil.

6) Season with 1/4 tsp of crushed black peppercorns, 1 tsp of mixed dry herbs, salt, 1/2 tsp red chilli flakes & cook till another boil comes!

7) Place the grilled vegetables on a platter & pour the dressing over & sprinkle chopped parsley & serve immediately!

NOTE: Cottage cheese is our good old paneer. Enjoy!!
